Green Onion Cornbread Muffins (Vegan)
A simple and yummy alternative to rolls at Thanksgiving. These are also paired well with soups, salads or CHILI!
Ingredients:
2 cups yellow cornmeal
¾ cup all purpose flour
1 tsp baking soda
1 tsp baking powder
2 tbsp apple cider vinegar
1 cup soy milk
½ cup water
2 tbsp maple syrup
2/4 melted vegan butter
2/3 freshly chopped green onions
1 cup corn
1 cup black beans
Directions:
Begin by preheating oven to 375. Spray oil on your muffin pan (12 cup). In a large bowl combine yellow cornmeal, flour, baking soda and powder. In a separate bowl, add milk, vinegar water, maple syrup and melted butter. Once wet ingredients are combined, pour onto your dry ingredients. Whisk together. Add green onions, corn and black beans.
Pour batter amongst the 12 muffin cups. Bake for 20 minutes. Let cool for at least 20 minutes. Serve & Enjoy!
