Back to School: Zucchini Pizza Bites
The perfect back to school snack does in fact exist! Tasty, healthy, gluten free and perfect for meatless Mondays. Of course, you can always add any toppings you desire such as pepperoni, fresh basil or leftover turkey sausage.
Prep time: 5-7 mins
Cook time: 5 mins
Ingredients:
-1 medium or large zucchini
-salt & pepper for taste
-3 tbsp marinara sauce
-1/2 cup mozzarella cheese
-olive oil spray
Directions:
Begin by slicing zucchini into ¼ inch thick slices and lightly season each side. Grill slices in a pan on medium heat for 1-2 mins. Once grilled, top with sauce, cheese and toppings. Broil in oven on low heat for an additional 1-2 mins. Let cool & enjoy!
